In 1951 83 vignerons founded a cooperative that in the 1974 took the current name “Cantina Produttori del Gavi” (Gavi’s winegrower’s winery). Nowadays the members are 95, spread all over the Gavi DOC territory so that we can produce different labels according to the different location of the vineyards.
The size of the vineyard holdings may vary, but the passion for our land and the desire to get the best from it is the same for all of us. That’s the reason why we bring the whole harvest to the cooperative, where “ one member counts one vote, no matter how much he produces “.
Harvest can be considered the peak of the collaboration between the Cantina and its members, between the oenologist and the vignerons. The harvest schedule is fixed by the oenologist together with the council of the Produttori del Gavi and it plans the grape’s delivery according to the ripening timing, which is different area by area: colder areas will deliver later and first delivery will come from warmer areas. From the second half of august the oenologist collects datas about the levels of sugar,
acid and pH from a sample of about 15 vineyards representing the whole 220 hectares. Harvest and delivery must be done in the same day and as soon as the grape arrives in the canteen it is weighted, the gradation checked and then the crushing is done according to the sugar levels and the type of grape. The schedule allows the winery to organize the whole winemaking process so that the quality is always at the top.
